Chipotle chicken and peach wraps

  • 4 large whole-grain tortillas
    1 (15-oz.) can refried beans
    2 cups thinly sliced romaine lettuce
    1 cup diced fresh or canned peaches
    1 cup chopped, grilled chicken
    1/2 cup sliced green onions
    1/2 cup sliced ripe olives
    1/2 cup chipotle salsa
    1/4 cup fresh cilantro leaves


Spread equal amounts of refried beans over tortillas. Top with remaining ingredients, leaving 2 inches empty at the top (ingredients will fill in space as you roll up). Roll up tightly and press gently to compact filling. Cut in half and cover tightly with plastic wrap. Refrigerate until ready to serve.

Makes 4 large or 8 small servings
