Chicken salad with mandarins

  • 1 lb. boneless, skinless chicken breast
  • 1 tbsp. Dijon mustard
  • 3/4 cup Best Foods mayonnaise
  • 1/4 cup sour cream
  • 2 tbsp. Dill Season mix (From Pampered Chef)
  • 1/4 cup diced onions
  • 1/2 cup diced celery
  • 1 mandarin orange split into segments and cut in 1/2 or 1 small can
  • 2 tbsp. mandarin zest
  • 1/4 cup toasted sliced almonds


Heat skillet over a medium-high heat. Grill chicken breast until cooked. Remove chicken and set aside. In a bowl combine mayo, mustard, sour cream, dill and garlic. Add celery, onions and diced chicken breast and mix. Toss in almonds and mandarin orange segments cut in ½ . Chill for about 1 hour. Serve over sliced tomatoes or as a sandwich on a croissant.
