Grandma Esther's gingerbread


2 eggs
3/4 cup oil
3/4 cup molasses
3/4 cup brown sugar
2 1/2 cups flour
2 tsp. baking soda
2 tsp. ginger
1/2 tsp. cloves
1/2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. nutmeg

A California Bountiful reader shared this holiday recipe with us, suggesting it is equally delicious served warm with butter or cool with whipped cream.


Preheat oven to 350 degrees. Beat together eggs, oil, molasses and brown sugar. Sift together dry ingredients. Mix wet and dry ingredients and add 1 cup boiling water. Mix until blended to even consistency and pour into a greased 9-by-13-inch pan. Bake for 40 minutes or until a toothpick inserted in the center comes out clean.  Serve warm with butter or cool with whipped cream.
