Honey-lime marinated watermelon

Who knew a simple, four-ingredient fruit salad could taste so good? This summer treat comes from the kitchen of culinary whiz Patty Mastracco.

8 cups watermelon cubes
3 tbsp. fresh lime juice
3 tbsp. honey
1 1/2 tbsp. thinly sliced fresh mint


Place all ingredients in a large container and stir lightly to coat; cover and refrigerate until ready to serve. Best served within 1 hour.

Tip: When traveling, pack dressing (lime juice and honey) in a separate container and drizzle over melon just before serving.
