Gourmet barbeque chicken sandwich

                    Ingredients
1 boneless, skinless chicken breast
 touch of clarified butter
 bbq sauce of choice (mild preferred for this recipe)
 1 slice cheese (aged New York cheddar preferred)
 chipotle aoli (can substitute mayonnaise)
 arugula (can substitute lettuce)
 1 avocado, sliced
 2-3 slices bacon
 Spice rub (combination of spices as described below)
 1 roll (gourmet chive roll recommended)
Directions
Wash chicken and place in two layers of plastc wrap.                           Pound to tenderize chicken and make the meat a uniform                           thickness.
 
 Add a touch of clarified butter before dipping chicken                           in a spice rub. A flavorful combination involves ground                           cayenne pepper, paprika, cumin and New Mexico chile                           powder. The rub can go on the chicken up to one day                           in advance of cooking.
Grill the chicken over meat heat, adding barbeque sauce                           toward the end of its brief time on the grill.
 Add avocado and bacon slices to balance the spices and                           add a smoky texture. Arugula is a spicy green addition                           to the sandwich, and an excellent sauce is chipotle                           aoli: a garlicky mayonnaise with roasted peppers.
Place the meat and fixings on a gourmet roll, preferably chive-flavored.
Serves 1.
