Fiesta corn bake

  • 1 white onion, diced
    3 tbsp. butter
    12 ears white corn, cleaned and cut off the cob, or 2 (12-oz.) bags frozen white corn
    1 (7-oz.) can diced green chiles
    1 (8-oz.) cube cream cheese
    3/4 cup salsa


Preheat oven to 375 degrees. In a sauté pan over medium heat, sauté onion in butter until translucent, then mix with corn, chiles, cream cheese and salsa. Stir well. Transfer to an oven-safe baking dish and bake for 30 to 45 minutes or until bubbly.
