Scoop shop has 'farm-to-cone' philosophy

San Francisco knows food, so it's no surprise that the city by the bay also knows its desserts—and that Salt and Straw is the hottest place these days to grab a frozen treat. Founded in 2011 by cousins Kim and Tyler Malek, the company currently has ice cream kitchens and scoop shops in San Francisco, Los Angeles and Portland.

Known for his creative flavors—from sea salt with caramel ribbons to freckled woodblock chocolate—head ice cream maker Tyler also conjures up special monthly flavors made from seasonal produce. Past innovations include green apple mayo sherbet, cultured sourdough ice cream with strawberries and fermented fudge, and even flavor combos inspired by "rescued ingredients," aka food waste.

Salt and Straw's reputation is built on small-batch, high-concept artisanal ice cream. They stand out from other scoop shops for their "farm-to-cone" philosophy and for their unusual flavors that sound like they must be gimmicks—sea urchin, baked potato, foie gras s'mores. They sound crazy, but as it turns out, they're crazy good! That's thanks to Tyler and his devotion to sourcing the best ingredients from local farmers. Since co-founding the shop, he's come up with more 500 flavors. And he doesn't look to stop anytime soon.
