Carrots 101

The main thing to remember when working with carrots is that we don't want them to dry out in the fridge.

To help ensure that doesn't happen, first trim any green tops off the carrots. The greens tend to suck the moisture from the carrots, leaving them dry. Then place the carrots in an airtight container of water and store in the refrigerator. Whole carrots stay nice and crunchy in their cold-water bath, and this is also a great way to store packaged baby carrots. When the water starts to look a little cloudy, swap it out with fresh water. Stored this way, carrots can stay fresh at least a week or two.
