Peach melba

  • Raspberry sauce (recipe follows)
  • 1-2 medium-sized peaches
  • 2 scoops of ice cream
  • 1 cup roasted almond slices (optional)
  • 2 cups whipping cream (optional)
  • For Raspberry sauce:
  • One 10-ounce package of raspberries
  • 2 tbsp sugar
  • 3 tbsp raspberry liqueur


Raspberry sauce:
Puree raspberries and sugar in the container of a food processor. Add the liqueur and chill or use immediately.

Peach Melba
In a single-serving dish, place half of a peach, cut side up Top the peach with a scoop of vanilla ice cream and pour some of the raspberry sauce on top. Finish off with almond slices and whipping cream and serve immediately.
