Stuffed dates

  • 1 (4-oz.) tube almond paste
    1 lb. dates (about 24, see note)
    12 oz. coating chocolate or candy chocolate
    1 cup shredded coconut, toasted, or
    sliced almonds, toasted

Roll pieces of almond paste into "pit"-sized pieces and stuff inside dates. Melt chocolate in a small bowl in a water bath or in the microwave. If melting in the microwave, stir often to prevent burning.

Dip each stuffed date completely in melted chocolate and gently tap excess chocolate back into bowl. Roll chocolate-covered  dates in coconut or almonds.

Note: If using unpitted dates, slice down the side of each date with a paring knife to remove the pit.
