Mashed new potatoes with spring onions

  • Serves 4
  • 8 small, red-skinned new potatoes, washed
  • 3 spring onions, washed and sliced finely
  • 4 tablespoons melted butter
  • Salt and pepper to taste


Place potatoes in a saucepan, cover with salted water and cook over medium heat until the potatoes are tender. Drain and gently dry the potatoes over a medium flame.

While the potatoes are cooking, sweat the spring onions in the butter until wilted. Once the potatoes are tender, mash the potatoes and toss them with the butter and onions. Add more salt and pepper. Serve while piping hot.
