Market Watch with Timaree Hagenburger: Müesli Foodie Bar with blackberries


Muesli base
2 cups old-fashioned oats (not quick-cooking)
1/2 cup chopped dried fruit
Water or plant-based milk
3 apples with skin, grated
1 lemon, zest and juice

Mix-ins (choose your favorites)
Fresh or frozen fruit (blackberries and kiwi are amazing)
Nuts and/or seeds (I like roasted walnuts)
Dried fruit (chopped dates add a "caramel-ish" sweetness)
Cacao nibs
Shredded unsweetened coconut
Cinnamon or your favorite spice blend (chai is nice!)
Additional plant-based milk, optional

One of Timaree Hagenburger's students grew up eating muesli for breakfast in Switzerland and won over her classmates with the recipe. "We had fun making customized combinations, just like Tracy and I did on California Bountiful TV. Set up your own Muesli Foodie Bar(TM) and invite your family and friends to enjoy this food that loves you back!"


Combine oats, dried fruit and just enough liquid to cover oats. Refrigerate, covered, overnight. In the morning, stir in grated apples and lemon zest and juice, then invite everyone to experiment with different combinations of mix-ins.
Serves 2 to 4

The Nutrition Professor's Shop Smart, Prep Smart, Eat Smart Tips:
• On the show, Tracy and I used apricots in the base, but raisins or any other chopped dried fruit will work great!
• Making the base is a great task to delegate. Designate someone in the house to be the "base maker" before heading to bed.
•Be sure to grate the apple with the skin, and chop up any leftover pieces of skin that didn't get grated small enough. You can dice the apple into small pieces, but it will change the texture, so trust me and make it with grated apple first!
• Zest the lemon with a microplace before cutting it in half to squeeze for juice, which you will want to do over a separate bowl, so that you can remove the seeds before adding to the muesli.
• Don't rinse the blackberries until just before you set up your Muesli Foodie Bar.
