Spicy zucchini lasagna

Spicy zucchini lasagna


1 large onion, diced
2 cloves garlic, minced
2 tbsp. olive oil
1/2 cup dried porcini mushrooms
3/4 lb. ground beef
1 (16-oz.) jar Arcangeli Hot Sicilian Pasta Sauce
6 medium zucchini, cut into 1/8-inch slices
8 oz. sliced mozzarella cheese
8 oz. ricotta cheese
Grated Parmesan cheese, to taste

No pasta? No problem! Nutritious zucchini takes a stand in this popular Arcangeli family recipe.


Sauté onion and garlic in olive oil until soft. Add mushrooms and ground beef and cook until beef is done. Stir in sauce. Grease a shallow, 3-quart baking dish. Layer zucchini, meat sauce, mozzarella cheese and ricotta cheese. Top with Parmesan cheese. Bake in a 350-degree oven, uncovered, for 35 minutes or until hot.
