Balsamic strawberries and goat cheese crostini

2 cups quartered strawberries
2 tbsp. chiffonade basil (plus more for optional garnish)
1 tbsp. balsamic vinegar
1 tsp. packed brown sugar
Pinch of salt and black pepper
1/2 baguette, cut into 1/2-inch slices
1/3 cup olive oil
4 oz. goat cheese


Preheat oven to 375 degrees. In a small bowl, combine strawberries, basil, vinegar, brown sugar, salt and pepper. Let sit for at least 30 minutes to an hour—or longer, if you can wait, as it helps the flavors meld.

In the meantime, place baguette slices on a large, rimmed baking sheet. Drizzle or brush olive oil evenly over each slice and bake until golden brown and slightly crisp, 8 to 10 minutes. Spread goat cheese on toast and layer balsamic strawberries over. Sprinkle with more basil, if you like, and devour.
