Pear honey

Passed down from her great-grandmother, pear honey is a delicious topping that Kelseyville pear grower Diane Henderson said is a versatile use for Bartlett pears.

Lemon juice


"Use 2/3 to 3/4 cup sugar per pound of pears. It pays to actually weigh the pears. Pare, core and finely dice the pears (or you can speed it up by using a Cuisinart). Add a little lemon juice for flavor and to keep the pears from turning brown. Put the diced pears and sugar into a saucepan and cook, stirring often and watching carefully to avoid scorching them. It takes a long time to cook them down until they are almost transparent, approximately 1 hour. Pour the pear sauce into sterilized jars and seal. I love this just plain, but one can add cinnamon or ginger or any number of other flavors."
