Carrot fries

Sweet and savory, carrot fries are the comfort food you didn't know you craved until now!

2 carrots
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1 tbsp. oil
1 tbsp. garlic powder
1 tsp. pepper
1/2 tsp. salt

Dipping sauce
2 tbsp. Greek yogurt
1 tbsp. lemon juice
1 tsp. pepper
1/2 tsp. garlic salt


Preheat oven to 400 degrees. Slice the tops and bottoms off carrots. Slice carrots like you prefer your fries: For example, cut each in half horizontally, then cut halves into thirds or fourths lengthwise. In a large bowl, mix together cheese, parsley, oil, garlic powder, pepper and salt. Add carrot sticks. Spread on a greased baking sheet and bake for 15 to 20 minutes, depending on how crispy you want them.

In a small bowl, mix together ingredients for dipping sauce. Serve warm carrots with dipping sauce.
