Ingredients

3 tbsp. blue Earl Grey tea
1 bottle sake
1/2 oz. gin
1/2 oz. dry curacao
Ice
Kumquats, cut in half
Caviar
Asian pear, cut into thin slices

Instructions

Put tea and sake in a pitcher and let infuse for 24 hours. The next day, mix 1 1/2 oz. of the sake infusion with gin and dry curacao. Pour over ice. Let chill on ice for 10 minutes, then strain into a martini glass or "Nick and Nora" glass. To garnish, skewer kumquats on a toothpick with a spoonful of caviar on top and a slice of Asian pear added to the glass.
