Far Western salsa

1 (28-oz.) can whole tomatoes
1 oz. mild California green chiles (Ortega), diced
1 clove garlic, finely chopped
1/2 small yellow or red onion, finely chopped
1/2 tsp. salt
Pinch black pepper
Dash Tabasco sauce
1 tbsp. chopped fresh Italian flat leaf parsley or cilantro (optional)
2 tsp. olive oil (optional)
1 tsp. balsamic or red wine vinegar (optional)


Drain half of the liquid from the tomatoes. Cut or crush tomatoes into small pieces. Mix tomato pieces, reserved liquid from can and remaining ingredients. Chill thoroughly and serve as a condiment for meats, fish or side dishes or as a dip for tortilla chips.
