Creamy rice pudding with strawberries and kiwi

2 cups Arborio or short grain rice
2 cups skim milk
1/4 cup sugar
2 tsp. vanilla extract
1/2 cup lightly sweetened whipped cream
6 strawberries
6 peeled kiwi slices
1 tbsp. grated orange zest


Combine rice, milk, sugar and vanilla in a medium saucepan. Bring to a boil; reduce heat and simmer over low heat, uncovered, for 15 to 20 minutes or until very creamy and thickened. Remove from heat and let cool (mixture will thicken more as it cools). Spoon cooled rice pudding into 6 dessert cups; cover and refrigerate. Just before serving, top each cup with a tablespoon of whipped cream, a strawberry and a kiwi slice. Garnish with orange zest.

Cook time: 15 to 20 minutes
