Pacific Rim boneless beef short rib

3 lbs. short rib boneless
2 tbsp. garlic crushed
1/2 C. hoisin sauce
1/4 C. soy sauce
1 tbsp. ginger julienne
10 pc. passion fruit pulp
2 C. pineapple juice
1 lemon juice (zest)
1 lime juice (zest)
s/p to taste
2 C water, used to moisten beef when evaporation occurs


Simply marinate beef with juice of pineapple,lemon & lime for approx. 30 min.

Drain beef and sear in a hot stewing pot, reserve liquid for later use. Once beef has been well seared add remaining ingredients including remaining liquid. Simmer at low temp. for approx. 2hrs., test tenderness if liquid reduces too much top up with a touch of water.

*** Remember to keep covered and to cook at low temp.***

Serves 4 to 6.
